Carrot Cake Breakfast Cookies

Finally a cookie you won’t be scolding your kids for eating too much of! These Carrot Cake Cookies are loaded with good stuff like oats, carrots, and raisins; and totally void of the Harmful 7 and nasty stuff like artificial preservatives, flavors and processed sugars. You may just want to make this a double batch.

Here’s what you’ll need:

1 ½ cup rolled oats
1 cup almond flour
1 cup shredded carrots
½ cup raisins
2 eggs
¼ cup coconut oil
¼ cup maple syrup
2 tsp vanilla
1 tsp cinnamon
¼ tsp nutmeg

Directions:

1. Preheat oven to 325F
2. Combine wet ingredients
3. In a separate bowl, mix dry ingredients
4. Combine two mixtures and form into 12, palm-sized cookies, or 24 bite-sized cookies
5. Bake on a baking sheet lined with parchment paper for about 20 minutes, or 15 for smaller cookies
