Chicken & Vegetable Stir-Fry

Skip the take-out filled with the Harmful 7 and opt for this quick and simple stir-fry. It’s so easy, you can whip it up in the same amount of time that it would take for your delivery guy to show up.

Here’s what you’ll need:

1 lb chicken breast, cubed
2 cup chopped broccoli
2 red bell peppers, sliced
5 oz shredded carrots
½ yellow onion, chopped
2 cloves garlic, minced
1 inch fresh ginger, grated
3 Tbs low-sodium soy sauce or coconut aminos
1 tbs raw honey
½ cup water
1 tsp red pepper flakes
1 tbs coconut oil

Directions:

1. In a large skillet, sautee onions and garlic in oil on medium heat
2. Add chicken and cook thoroughly
3. In a small dish, combine ginger, soy sauce, honey, water and red pepper flakes to form sauce
4. Add remaining veggies and sauce to the skillet on medium heat and cook for 3-4 minutes, or until veggies reach desired tenderness
