Quinoa Taco Bowls

Try these Quinoa Taco Bowls on your picky eaters. Packed with protein and fresh veggies, this healthy dish tastes just as good as it is for your kids’ growing bodies.


1 cup quinoa

2 cups water

1 lb lean ground turkey

1 Tbs chili powder

1/2 tsp salt

1 Tbs cumin

1 tsp garlic powder

8 oz black beans

1 red pepper, sliced

1 orange pepper, sliced

1/2 cup red onion, sliced

1 Tbs olive oil

Pico de gallo:

2 large tomatoes, diced

1/2 cup red onion, diced

1/4 cup cilantro, chopped

1 tsp minced garlic

1/2 lime, juiced


  1. Bring quinoa and water to a boil in medium pot
  2. Reduce heat to low, cover and cook for 15 minutes
  3. Brown ground turkey with seasonings over medium heat
  4. Add oil to a small saucepan and saute beans, peppers and onion until tender for fajita-style veggies
  5. Combine tomatoes, onion, cilantro and garlic, and stir
  6. Add juice of half a lime
  7. Assemble taco bowls by adding quinoa, ground turkey, black beans, fajita veggies and pico
