Sausage Lentil Stew

Here’s what you’ll need:

2 cup lentils

1 lb lean ground turkey
1 large onion, chopped
4 cup kale, chopped, stems removed
2 cup shredded carrots
4 cup vegetable broth
2 cup water
2 14.5 oz cans fire roasted tomatoes
3 cloves garlic, minced
2 tsp salt
2 tsp Italian seasoning
1 tsp pepper

Directions:

1. Brown ground turkey in a skillet with Italian seasoning, salt and pepper
2. Add cooked ground turkey and remaining ingredients to a crockpot and cook on high for 4 hours, or until lentils are tender
