Nothing says summer more than a peach cobbler with a side of vanilla ice cream, right? Unfortunately, this summer classic may be loaded with the Harmful 7. Fortunately, we have designed a healthy and perfectly portioned treat free from the Harmful 7. This single-serve peach cobbler is made from only whole food ingredients, and it contains dramatically less sugar than a traditional cobbler.
Here’s what you’ll need:
2 whole peaches
1 Tbs almond flour
2 Tbs rolled oats
1 tsp raw honey
2 Tbs chopped walnuts
pinch of salt
- Preheat oven to 375F
- Slice your peaches in half and remove the pit – you can do this by running your knife along the peach, circling the pit until you have sliced through the fruit. Then twist the two halves until you can separate them. Remove the pit and dig a small cavity into the peach.
- Mix together the almond flour, rolled oats, honey, walnuts, and salt.
- Spoon the mixture into the four halves
- Bake for 20 minutes, or until the peaches reach desired tenderness.
