Spaghetti Pie

Did you know you can swap out regular spaghetti noodles with spiralized veggies like zucchini, carrots or sweet potatoes? You can also use spaghetti squash. It’s a great way to add nutrition to a classic dish. If you’re feeling adventurous, try this spaghetti pie! It’s loaded with nutritious veggies and protein in every bite.


Here’s what you’ll need:

2 medium zucchini
1 ½ cup parmesan cheese
16 oz ricotta cheese
6 large eggs
6 cloves garlice, minced
10 basil leaves, chopped
1 cup cottage cheese
½ tsp pepper
1 tsp salt
1 tsp onion powder


1. Preheat oven to 375F
2. Combine all ingredients except zucchini
3. Spiralize zucchini to form noodles, or grate zucchini if you do not have a spiralizer
4. Add zoodles to mixture
5. Poor into a greased 9×13 inch pan
6. Bake covered for 30 minutes
7. Uncover and bake for an additional 40 minutes
