
Sweet Potato Chili
Cooking can be so time consuming. This recipe is designed to be super simple for you, AND it will make you enough food to feed your family for DAYS. Or you can stick this one in the freezer for nights when you’re in a pinch and need something quick. Freeze this in individual bags, so you only have to thaw one serving at a time. It’s perfect for batch-cookers, busy parents, and picky eaters.
Here’s what you’ll need:
1 lb ground turkey
28 oz can diced tomatoes
2 15 oz cans pinto beans
15 oz can kidney beans
4 medium sweet potatoes
1 yellow onion
2 jalapenos
2 Tbs chili powder
1 Tbs cumin
2 tsp salt
3 cloves minced garlic
4 cup vegetable broth
Directions:
1. Brown ground turkey on medium high heat
2. Peal and chop sweet potatoes into bite-sized chunks
3. Dice onion and jalapenos
4. Throw it all in the crock-pot and cook on high for about 4 hours or low for 8 hours (or until sweet potatoes reach desired tenderness)
