Sweet Potato Nachos

Whether you’re sitting down as a family to enjoy the game, your kids are having friends over and need some snacks, or your kids are coming home looking for an after school snack, these Sweet Potato Nachos are filling nutritious and delicious. Give them a try the next time you’re in need of a fun snack.

Here’s what you’ll need:

3 medium sweet potatoes
1 lb lean ground turkey
1 tbs chili powder
1 tbs cumin
1 tsp garlic powder
¼ tsp cayenne pepper
1 can black beans, drained
¼ cup fresh pico de gallo
3 green onions, sliced
½ cup shredded cheese


1. Preheat oven to 350F
2. Slice sweet potatoes as thinly as possible and lightly coat them in olive oil
3. Line sweet potatoes in single layer on baking sheet
4. Bake for 30 minutes, or until crisp
5. In the meantime, brown ground turkey with chili powder, cumin, garlic powder and cayenne pepper
6. Once chips are crisp, arrange on a large plate and top with turkey, cheese, pico, beans and green onions
