Taco Bites

If you want a fun weeknight meal or bite-sized snacks for your picky eaters, these Taco Bites are for you. You can feel relieved to feed your kids something healthy and filled with nourishing vitamins and lean protein that will keep them satisfied and functioning optimally.

 

Ingredients:

1 lb ground turkey

1 Tbs chili powder

1 Tbs cumin

1 tsp minced garlic

15 oz can black beans

1 cup salsa

½ cup onion, chopped

1 lb baby bell peppers

½ cup cheese

 

Directions:

  1. Preheat oven to 375F
  2. Coat a large skillet with olive oil over medium heat
  3. Add garlic and onions and stir until onions are translucent
  4. Add ground turkey, chili powder and cumin and brown completely
  5. Reduce heat and add beans and salsa and simmer
  6. Slice bell peppers in half and remove seeds
  7. Bake peppers in oven for 20 minutes
  8. Stuff peppers with ground turkey mixture and top with cheese
