1 1/2 cups wild rice
3 large navel oranges
2 Tbsp lemon juice
1/4 cup olive oil
1/2 tsp salt
1 tsp black pepper
1/2 cup chopped green onion
- Cook wild rice according to package instructions
- Peel and slice oranges into bite-sized pieces
- Combine lemon juice, olive oil, salt and pepper; whisk together
- In a large bowl, stir in rice, oranges, and dressing until well-mixed
- Garnish with green onion
