Red Lentil Dahl

Ingredients

  • 1 1/2 cup red lentils
  • 1 quart vegetable broth or water
  • 2 small yellow onions diced
  • 1 Tbsp garlic minced
  • 1 Tbsp cumin whole
  • 2-3 Tbsp ginger minced
  • 1 tsp turmeric
  • 4 Roma tomatoes
  • 2 tsp coriander
  • 2 tsp salt
  • 1/4 cup lemon juice
  • 1 Tbsp oil or butter for pan
  • 1 tsp garam masala
  • Optional: cilantro for garnish

Instructions

  1. Over medium heat in a large sauce-pan, cook onions, garlic, and cumin in oil or butter
  2. Add remaining ingredients except for garam masala and cilantro, increase heat to high and bring to boil
  3. Reduce to a simmer and cook covered for 10-12 minutes, or until lentils are tneder
  4. Add garam masala and garnish with cilantro
  5. Enjoy on a bed of brown basmati rice
