Greek Quinoa Salad

Ingredients
2 cups quinoa – dry
2 cucumbers
3 medium vine-ripened tomatoes
1 cup feta cheese
2 Tbsp olive oil
Juice of 1 lemon + 1/2 tsp lemon zest
2 tsp salt
2 tsp oregano
Optional: 1/2 cup black olives or red onions
Directions
- Prep quinoa according to directions 
- Dice cucumbers, tomatoes and onions 
- Whisk together olive oil, salt, oregano, lemon juice and zest to form dressing 
- Stir together all ingredients
